Magliocco Canino grapes are de-stemmed and soft-crushed; with about ten days maceration and fermentation at a controlled temperature of 24°C (75°F); the wine is moved to stainless steel tanks (304) thermo-conditioned, for twenty-four months aging. Bottled, completed refining for further six months.

Soft destemming followed by fermentation with yeasts naturally present on the grapes, followed by submerged cap maceration for 40 days circa. Aging in stainless steel for 12 months. Refining in bottle for 6 months

WINEMAKING TECHNIQUES
Short maceration and soft pressing. The clarified must then fermented with original yeasts at a controlled temperature of 23 °C for about twenty days. The wine has completed the process of maturation for a period of four months in stainless steel tanks and in the bottle for about eight months.

WINEMAKING TECHNIQUES
Greco bianco grapes are de-stemmed and soft-crushed; without maceration the clarified must then fermented with original yeasts at a controlled temperature of 21°C for about twenty days. The wine is moved to stainless steel tanks (304) thermoconditioned, for eight months aging. Bottled, completed refining for further two months.

Pressing without de-stemming in order to avoid colors and tannins extraction. Must partially fermented cooled at 16°C is blocked “cooling it” to produce residual sugar which will lead to a second fermentation into the bottle. Aging in steel vat, then in bottle for 4 months. Without added sulphites.
